Just to expand on BobVonBob's explanation. The difference between WiFi versions is based on different 802.11 standards. These standards have to be supported by the wireless cards. WiFi6 or 802.11ax is a wireless standard your wireless network cards need support for in order to benefit from the higher speeds.

So here is why im asking about wifi 6 routers. I have gigabit speed from verizon fios. the ONT is connected via ethernet to the fios gateway router. The fios gateway router is also connected to my coax in the wall.
